Scooby Bars

I promise you won't regret making this recipe. I promise you'll be the most popular person in the room at the next potluck. However, I can't promise that you won't eat the whole pan. Let me introduce you to Scooby Bars...




When I was in my second year of teaching second grade, I had a sweet mom bring me these sweet treats every single Friday!  I would share with my husband and friends, but I can’t deny that perhaps I once ate an entire pan all by myself!  This is my go to recipe when I need to make a quick dessert for a potluck or small group night.  Be careful, these things are addicting!

Preheat your oven to 350 degrees.  Here are the ingredients you will need: 1 box of yellow cake mix, 1/2 cup oil (I like to use coconut oil), 2 eggs, and here comes the best part…. 1/2 cup EACH of mix-ins.  I love the combination of chocolate chips, butterscotch chips, and M&M’s.  I’ve also tried peanut butter chips and peanuts before. #winning


Dump all ingredients into a bowl and mix together by hand.  The mixture will be pretty thick.  Spread your batter into a greased 9×13 pan.  You might need to use your fingers to spread the batter.  Just make sure you have washed hands, please!  Bake in the oven for 17-20 min.  Let cool before eating.



I usually combine all of the leftover mix-ins in a ziplock bag and store in my freezer for the next batch of Scooby bars.  That is, if my husband doesn’t find my stash!

Scooby Bars

1 box of yellow cake mix

2 eggs

1/2 cup oil

1/2 cup EACH of M&M’s, chocolate chips, butterscotch chips (or mix-ins of your choice)


Preheat oven to 350 degrees.  Grease 9×13 pan.  Mix all ingredients together in a bowl and spread into pan.  Bake for 17-20 min.  Let cool before cutting.  Enjoy!
